Finding the balance between, healthy, hearty and simple isn’t as impossible as it might seem – especially if you plan ahead. And, by adding extras to your tried and true favourites, you can turn a lunch into a luncheon.
When we’re talking about healthy lunches then salads naturally spring to mind. But if you’re thinking about a drab green salad with an occasional tomato you can think again.
Salads can be versatile, filling and packed with flavour. How about a corn, tomato and avocado salad? Or, cook up some lentils, quinoa, millet, farrow or brown rice as a base and add in your favourite vegetables and proteins. Why not try a Moroccan carrot salad with feta and millet, or a salmon and kale quinoa salad with a zesty lemon dressing? Add some beans for heart health and fibre, and you’re creating bowls of wholesome bliss.
If you’re looking for something more substantial, there is no end to the combinations you can create with mini frittatas. Turn a muffin tray into a savoury sensation with you own flavour mash ups. The kids can get involved with this, too. From corn and bacon, to pumpkin, leek and feta, or even asparagus and prosciutto, all it takes are eggs, milk, salt, pepper, and your imagination.

How about a wrap? Does meatball and baby spinach with tabouli and BBQ sauce sound good? Cream cheese and smoked salmon with red onion, capers and cucumber makes a refreshing lunch too. And with all the varieties of wrap available, you can switch it up every week. Keep an eye out for spinach, sundried tomato, cheddar, wholemeal and multi-grain wraps – and gluten free mountain breads. They are the perfect way to finish leftovers too!
